These raw mango coconut balls make perfect snack when you crave some sweetness but try to keep it healthy. They are completely plant based, gluten free, refined sugar free. and unprocessed. They are made with fresh mangoes, cashew nuts, desiccated coconut. Sweetened with golden raisins and spiced up with saffron and green cardamom.

I’m a big fan of mangoes and coconut, so these bliss balls are a match made in heaven. Lately I’m obsessed with the saffron and cardamom combination too. Flavours have the magic to make you jump in space and time. They can take you to a journey far away or bring back memories. When I miss India I indulge myself with spices. Real bliss!

Ingredients

  • 1 ½ cup cashews
  • 1 cup desiccated coconut
  • 1 tbsp white chia seeds
  • 1/4 cup mango puree
  •  2 tbsp golden raisins
  • 2 tbsp coconut oil
  • 1/4 tsp cardamom powder
  • a pinch of saffron

Instructions

  1. In a food processor blend all the ingredients until combined. Might need to scrape the sides of the processor cup time by time.
  2. Leave the dough in the fridge for an hour.
  3. With your palms shape balls from the dough and roll them in some shredded coconut.
  4. Store them in the fridge.
