Eton mess is a traditional English dessert made of rich whipped cream, crunchy meringue and strawberries. To be honest it is my die for sweet. Im not a sweet tooth but this is it…I could never understand why people call a food sexy until I met this one. The perfection of simplicity is truly indulging. This is the perfect date, wedding anniversary or Valentine’s day dessert for me.

It took me a while to figure the best solution for the whipped cream part as I’m not crazy about the coconut milk whipped cream. Finally I’ve found vegan double cream in the supermarket and the taste is good and it works!!! I would like to figure out how to make it at home from scratch.

To make Eton Mess takes a little bit of time and patience because of the aquafaba meringue. You can prepare all the elements in advance and layer it or mess it up before serving it.

Ingredients

Aquafaba Meringue:

  • 1/2 cup chilled aquafaba ( chickpea brine drained from  400g can)
  • 1/2 cup caster sugar
  • 1 tsp lemon juice 
  • 1/4 tsp almond extract (optional) 
  • 1/2 tsp beetroot juice (optional)

 

Strawberry Sauce:

  • 500g strawberries
  • 2 tbsp caster sugar
  • l tbsp lemon juice
  • 1/2 tsp rosewater

 

Whipped Cream:

  • 250ml vegan double cream
  • 2 tbsp icing sugar
  • 1/2 tsp vanilla extract

 

Instructions

Meringue:

  1. Preheat oven to 75ºC.  Line 2 baking trays with baking paper.
  2. Place aquafaba and lemon juice in a bowl and beat wit  an electric whisker until it starts to form soft peaks.
  3. Little by little add the caster sugar and keep the whisker running. Add almond extract if using. Continue whisking until white, thick and glossy just like egg meringues.
  4. Add beetroot juice and very gently fold it into the mixture without over-mixing.
  5. Spoon the mixture in a piping bag and pipe kisses on the baking sheet or simply spoon and spread thinly.
  6. Bake them for 2 hours without opening the oven.
  7. When they are ready let them cool down.

 

Strawberry sauce:

  1. While your meringues are baking dice or mash the strawberries.
  2. Add the sugar, lemon juice and rosewater and leave aside for 20 minutes.
  3. Place the half of the strawberries in a blender and blend it into a smooth sauce.

 

Whipped cream:

  1. Place double cream, sugar and vanilla extract in a bowl and whisk it until stiff peaks form.

 

And all comes together:

  1. In glasses or bowls layer up the meringue, whipped cream, strawberry sauce and pieces and repeat with the remaining ingredients.
  2. Decorate with strawberries, berries and meringue kisses.
  3. Enjoy!

 

 

Notes

Plate it only before serving. You keep the whipped cream, strawberry sauce in the fridge and the meringues in an airtight container.
