Muhallebi, malabi, mahalepi, phirni is a sweet pudding made with ground rice and flavored with rosewater, jasmine or orange blossom water. There are many versions of this dessert from the Aegean through Anatolia, the Middle East, India till Far East Asia. In this recipe I used rosewater and Mastic gum which in Turkish cuisine called Sakizli Muhallebi.
It’s ready in 10 minutes, super fast, super simple, vegan and gluten free. And of course light and yummy.
If you don’t have ground rice or rice flour, you can grind it at home. It will work as well. Feel free to experiment with toppings. You can serve with almonds instead of pistachios. You can add some cardamom or leave out the mastic gum. You can try with different fresh or dried fruits, with rose syrup or rose petals. Don’t limit your fantasy!
